Pinot Noir has long been known as a difficult varietal to grow, vinify and on occasion, even drink. We knew if we wanted to make a great Pinot Noir, then we would have to go outside our appellation in Southern California to a region that is known for the varietal. The cooler climate conditions that the Santa Lucia Highlands exhibit encouraged the thought process. The Santa Lucia Highlands sit high above the Salinas Valley, arguably some of the richest soils in the world, and there we found a grower that knew Pinot Noir and grew it for several prestigious wineries in Monterey. His Vineyard, the Tondre Grapefields, are a brilliant example of top notch viticulture, with serious attention to every detail in the vineyard.
Trying to coax the delicate fruit characters to the forefront, maintaining the chemistry of the grapes and hoping that the harvest was timely were all concerns that we grappled with during the vintage. Three separate clones were chosen (17, 4, and 777) each for their respective attributes of flavor, color and aroma. Extreme care was used in handling the fruit and it was crushed into half-ton, open top fermenters. A long, slow, cool fermentation with daily punch downs yielded a wine that was rich and berry scented. Destined to be a classic, this wine was aged in new French oak for 2 months during malo-lactic fermentation, and then racked to older French oak barrels for a subsequent 8 months of aging prior to bottling. The berry nuances are followed closely with rose petal and peony aromas, with toasty oak fragrances that round out the aromatic structure; the flavors are bright and crisp, ranging from raspberries to light roast coffee. The tannins are supple and fleshy, not coarse and dry.
