The desire to produce a barrel fermented/barrel aged style of Sauvignon Blanc comes from our love of Pouilly-Fumé from the Loire Valley in France. These oaked styles of white wine are a more complex take on the normal, all stainless steel versions of Sauvignon Blanc, yet it is important to maintain a bright fruit expression in the aromatics and flavors, and not hide the fruit behind too much oak. Our Estate Fumé is the culmination of painstaking viticulture and wine-making expertise. Light skin contact in the press (2-3 hours) gave the wine a richer expression and the balance of French oak brought harmony and depth to the finished wine. Viognier was an added component to the final blend that is not the norm in the Loire, but we found the synergy between the two varietals too good to ignore. Bright citrus, stone fruit and melon notes are joined with a rich caramel nuance from the barrel aging. The flavors are splendidly sophisticated and lush, delicate dried herbs and floral aspects bring it all together as the aroma brings images of summer meadows to mind. Enjoy this wine lightly chilled, served with seafood, roasted fowl or mild soft cheeses.
