Sparkling wines come in many styles and varying levels of residual sugar(sweetness). While Brut and Extra-Dry are the most common styles, Natural, “brut nature” or “brut zero” are all the same name for a style less common and certainly a bit more difficult to pull off because it is “bone” dry, and crisp flavors leave nothing to hide behind a dosage of sweetened wine. Our Natural is a blend of 78% Pinot Noir, 14% Pinot Blanc and 8% Chardonnay. It has a residual sugar of 1.8 grams per liter (that’s 0.18%–way below the usual 1.0 to 1.3% residual sugar, where a typical Brut would finish). Aged on the yeast for nearly 24 months, this wine has a rich yeast aroma and creamy texture that has developed with this long aging on the yeast. Delicate berry and tropical notes from the varietals all come together to give a delicate fruit note that is fresh and pure.This is a sparkling wine with the right attitude and a “no excuses” demeanor:crisp, clean and to the point. Enjoy this wine when nothing but “dry”will do. Fresh shellfish, caviar, light cheeses are the perfect marriage, or be adventurous and have it in lieu of a Chardonnay or Sauvignon Blanc with your next dinner.
